Storing Jean-Marc Champagne
Store below 25 degrees c, there will likely be a deterioration in wine quality if stored above 25.

Best not to store in the fridge for more than a couple of weeks.

Avoid fluctuations in temperature. Store away from light.

Champagne Glasses
Champagne must be served in a classic champagne flute. This promotes the rise of the bubbles and best presents the champagne.

Clean the flutes by hand - not in the dishwasher. Wash in clean warm/hot water with a mild dishwashing soap, then rinse in clean warm/hot water from the tap. Drain then dry with a clean linen or cotton tea towel.

Apparently the best bubbles will rise if there are some tiny dust particles in the glass when pouring. Chilling the glasses reduces the bubbles.

Chilling your Champagne
Fill a champagne bucket half with ice and half with water. Chill for 30 - 45 minutes and serve.

Don't place Champagne bottles in the freezer - trying to chill them rapidly undermines the flavour. Bottles may break if left in the freezer!

You can also place bottles in the fridge for 3 -4 hours before serving. The ideal serving temperature is 6-8 degrees C.

Removing the cork
Exercise care when removing the cork!

Hold the bottle at a 45 degree angle, pointing away from other persons. Remove the foil then the wire

Hold the cork and twist the bottle, gently releasing the cork and pressure - loud 'pops' are best avoided.

Have a glass close by to catch any spillage.

Flying corks can cause eye injury - ease it out slowly. You can drape a napkin over the cork before loosening it.

Pour a small amount into each glass, allow it to settle then fill to a maximum of 2/3 height.
